What a great weekend, it was nice and sunny and to top it of the San Diego Chargers won, so I decided to practice on baking gingerbread cupcakes, I bought gingerbread cake mix and cream cheese frosting they were very easy to bake and delicious, and for Christmas I plan to bake the same cupcakes for Omar's family since we will be spending the holidays in San Francisco, I wanted to bake them some cupcakes, Happy Holidays everyone.. I will post some more pictures of all my holidays goodies :=)

Chocolate cup cake
I love cupcakes so today for my nieces birthday I'm going to bakes some chocolate cupcakes.
I got the recipe from a magazine(Cooking Light) I added Some butter cream frosting plus I added half of a peanut butter cup for topping, they were so delicious and moist I can't wait till bake them again.

Chocolate Chip Cookies
I got inspired to bake cookies today from Omar, I love baking so I opened up one of my favorite cook books" Joy of Cooking"
I found a simple but delicious recipe, these cookies may not look like a big deal but they have a delicious flavor, is amazing.
you will enjoy it with a glass of milk or a nice warm cup of tea. and the best part is you might already had all the ingredients in your pantry.

Preheat the oven to 375. Grease or line 2 cookie sheets.
Whisk together:
1 cup plus 2 Tbs all-purpose flour
1/2 tsp baking soda
Beat in a large bowl until well-blended:
1/2 cup (1 stick) unsalted butter, softened
1/2 cup sugar
1/2 cup packed light brown sugar
Add and beat until well combined:
1 large egg
1/4 tsp salt
1 1/2 tsp vanilla
Stir in the flour mixture until well-blended and smooth. Stir in 1 cup chocolate chips (I added an extra 1/2 cup).
Drop the dough by heaping teaspoonfuls about 2 inches apart on the cookie sheets. Bake, 1 sheet at a time, until the cookies are just slightly colored on top and the edges are brown, about 8 - 10 minutes. Let stand briefly, then remove to a rack to cool.
Makes about 36 cookies.

The little mermaid
I started this blog because I want to be able to log my new hobby (baking) and I like to start with the little mermaid.
I not much of a decorator but I made this pineapple/carrot cake for my niece Mia's birthday.
I got help on the decorating part, I used fresh carrots and pineapple.
I added the recipe for it, I decorated it with fondant and bought some simple hawaiin decoration and the little mermain candle that went well with it. ok for being my first cake it came out awesome. but I really want to focus on cupcakes they seem so adorable to make so look forward to showing you my new hobby.
